A passion turned into a business

I love to cook. That wasn't always the case, though. When my mother announced to me at the tender age of 11 that she was returning to work and college to pursue a degree, a feeling of dread overtook me. I knew my father and brothers (yes, I am an only girl) would be hungry long before mom would arrive home each evening, and the chore of cooking, enduring the complaints and teasing and cleaning up afterwards would now fall on my shoulders.


Fast-forward more than 20 years later, and that period of my life helped to produce an accomplished cook and baker - one who not only likes to cook and bake, but one who LOVES to do so. Cooking is my love language.


When I met my wonderful and sweet husband a few years ago, I discovered he'd recently been diagnosed with a sensitivity to gluten. I never realized how hard it was for folks with gluten sensitivities to find products that wouldn't cause a flare-up! And don't even get me started on how difficult it is to find restaurants that serve a full gluten-free menu! There are some, but ones that have a true gluten-free menu are few, and the quality of food there is sometimes lacking.


That's when I made it my mission to make every food my sweetheart wanted to eat, but just in a gluten-free and delicious version. He became my taste tester, and after some hits and misses, I nailed it! Our first Thanksgiving, he was able to eat dressing, mac-n-cheese, rolls, and even a German chocolate cake for desert! Maybe that's really why he asked me to marry him several months later (smile).


The desire I had to make my husband's food choices better sparked a passion for providing the same for anyone with a gluten sensitivity, and thus, GF Xpress was born. It's taken a few years to build up the courage to step out and launch this endeavor, but win or lose, it's here!
